About this coffee
Origin
Today, Hawaii Kona coffee is grown on more than 600 farms, primarily family-owned smallholdings barely exceeding two hectares each. Only 40'000 sacks are yielded in the average year, making this an extremely rare product.
In order to conserve the incomparably subtle aroma of this coffee, the beans are kept in their parchment, the thin layer of rind under the pulp of the fruit, before being selected and stored in double thickness sacks.
Roasting
The coffee beans are then roasted until they assume the colour of caramel both inside and out. The bean is then ground in a very precise way in order to reveal the finest of flavours and to reduce any undesirable bitterness.
